The Tossizza Foundation Cheesemakers opened in Metsovo in 1955. Today it produces 170 tones of cheese a year. The foundation’s cheeses are known for their high quality and for their special tastes!
A short history: In the 1950s, Evangelos Averoff-Tositsas, changed the image of Metsovo with a series of projects implemented with resources from the Baron Michael Tossizza Foundation. As part of these, he created an innovative dairy and a separate cheesemakers, and many of the town’s young men were sent to Italy to learn the art of cheesemaking. Some of them still work at the Foundation today, or make cheeses elsewhere in Metsovo – and their produce is wonderfully unique!
There is a limited supply of the unique cheeses made by the Tossizza Foundation. Production is limited as it is directly governed by the availability of milk produced in the region. The cheeses are produced using traditional methods which respect the area’s cheesemaking tradition…
