Today it produces 170 tones of cheese a year. The foundation\u2019s cheeses are known for their high quality and for their special tastes!\r\n\r\n<strong><em><u>A short history<\/u><\/em><\/strong><em>: <\/em><em>I<\/em><em>n the 1950s<\/em><em>,<\/em><em> Evangelos Averoff-Tositsas, changed the image of Metsovo with a series of <\/em><em>projects implemented <\/em><em>with resources <\/em><em>from<\/em><em> the Baron Michael To<\/em><em>ssizza<\/em><em> Foundation. <\/em><em>As part of these<\/em><em>, he created an innovative dairy and a separate <\/em><em>cheesemakers<\/em><em>, <\/em><em>and<\/em><em> many <\/em><em>of the town\u2019s<\/em> <em>young men were<\/em><em> sent to Italy to learn <\/em><em>the art of <\/em><em>cheesemaking. Some of them <\/em><em>still <\/em><em>wor<\/em><em>k at the <\/em><em>Foundation <\/em><em>today, <\/em><em>or <\/em><em>make cheeses elsewhere in <\/em><em>Metsovo<\/em><em> \u2013 and their produce is wonderfully <\/em><em>unique<\/em><em>!<\/em>\r\n\r\nThere is a limited supply of the unique <strong>cheese<\/strong><strong>s<\/strong> <strong>made by the<\/strong> <strong>Tossizza Foundation<\/strong><strong>. <\/strong>Production is limited as it is directly governed by the availability of milk produced in the region.
