MINI PIES WITH MYZITHRA
1 kilo of flour
salt
6 egg yolks
2 soup spoons of olive oil
1 soup spoon of lemon juice
A little milk
1 and a half kilos of sweet myzithra cheese
A little grated mint
Flour for the pastry
Seed oil for the frying pan
In a bowl, mix the flower with a little salt, two egg yolks, the olive oil and the lemon juice. Mix well and add the milk slowly until the dough is fairly elastic. Leave to rest for half an hour. In another bowl mix the beaten myzithra, the remaining eggs and the mint with a fork. This is the filling and should be relatively dry. Roll the dough out into five sheets on a floured surface. Cut the dough into small rounds using a glass or a small bowl. Put one spoon of the filling on each of these rounds and fold over the pastry to form a “half-moon” shape. Put a good amount of seed oil in the frying pan and heat. Place the mini pies in the pan and fry on both sides. When they have browned, take out of the pan and serve either hot or cold.
TIP: The mini pies can be served on their own or with sugar or honey
